Oysters With Spinach and Gruyere

Makes 4 servings

24 oysters (in the shell), scrubbed

1/2 cup butter, melted

6ounces fresh spinach, cooked and drained

6tablespoons Worcestershire sauce

4ounces Gruyere cheese, grated

1lemon, cut into wedges, for garnish

1. Shuck oysters using an oyster knife. Scrub the inside of the deeper shell.

2. Brush the inside of each shell with a generous amount of melted butter. Spread a layer of cooked spinach on each shell. Dip each oyster in Worcestershire sauce and place on top of spinach. Sprinkle each oyster with remaining melted butter and top with grated Gruyere cheese.

3. Place oysters in a shallow pan or on a cookie sheet. Broil quickly or until the edges of the oyster curl and the cheese is bubbly and golden brown.

4. Serve on a bed of sea salt with lemon wedges.
